Oh my goodness, what I great dinner I had tonight. It was nothing fancy or difficult, but man was it tasty.
One of the things I have been doing as I have adapted to grilling for one is to make enough so that I can use the leftovers for lunch the next day. Tonight, I had hot Italian sausage which I cut into one inch pieces and put onto skewers along with green pepper and red onion. I had enough Italian sausage for five small skewers.
I placed the skewers on my Weber Smokey Joe Grill. I cooked these for about 10 minutes (medium-low heat).
When they were done, I served them over brown rice with a little marinara sauce. I was not expecting much from a quick, very easy meal, but this was an outstanding dinner. Maybe it was just that this was exactly what I was in the mood for, but whatever the reason, I loved it. I will be making Italian sausage kabobs again soon. The best part, I will be having these again for lunch tomorrow.
